My Mom's Incredible Yuca Recipe - straight from PARAGUAY! Featuring luscious Heavy Cream and Steelhead Trout right by the Waterfront, paired with a delightful White Wine! Forget the paper plates - this feast comes with Lobster Mushrooms and Chanterelles foraged by the talented Josh! Jowl Bacon, Onions, Grass Fed Butter, Heavy Cream & Garlic, along with Cassava/Manioc/Yuca that I adored growing up in Paraguay... simply the best! Directions: Boil the Yuca until cooked In WOK, saute Jowl Bacon and Garlic in butter Crisp up the bacon Add heavy cream Add chopped onions Add Black Pepper, No Salt Add Chopped Mushrooms Remove Bacon and cool, chop into small pieces Ad back into the WOK and saute together for another 5 minutes Add in the cooked Yuca Thank you mom! Steelhead Trout: One fresh fillet Steelhead Trout Top the fillet with Keen's Hot Mustard and honey mixture Add a good beer Black Pepper/ No Salt Saute trout skin side down first Turn once, Saute until Golden Brown Serve the skin, it is healthy Serve with good bread and cheese and a bottle of Chilled White Wine out on the dock!
